A study, in the regional area of Epirus (Greece), of autochthones thermophiles bacteria isolated from traditional dairy product and their antimicrobial profile

Abstract

The present research focuses on a study, in the Regional area of Epirus (Greece), of autochthones thermophiles bacteria originated from various sources as, dairy products, unpasteurized milk, traditional “renner” and finally feces from infants aged 1 to years old. Futhermore, their antimicrobial activity was evaluated against classic food pathogens of the genus Salmonella sp.: S.arizonae, S.entetitidis, S.typhimurium and S.typhi, which are usually involve in gastrointestinal infections. From a total of 120 samples, 206 strains of lactic acid bacteria belonging to 14 different species were recovered. By grouping them, 48 strains belonging to the following species, L.plantarum (14 strains), L.paracasei subsp. paracasei (9 strains), E.faecium (14 strains), E.faecalis (11 strains) were entered on detailed study.
